Get the most bang for your buck and use this recipe to make your own chicken broth that can be used to cook with or just drink up. You can use a crock pot or an instant pot but my favorite is to use an 8qt stock pot and cook it for 12-24 hours. Here’s what you do:
Take a whole chicken straight out of the freezer and put it in your 8 qt stock pot, put 2 tablespoons apple cider vinegar, 1 whole onion quartered and fill it the rest of the way with water to the top. Place it on the cooktop on simmer and let it cook for 12-24 hours. My favorite is let it cook 24 hours. Then you take the meat of the bone to cook whatever you would like and use the broth for cooking and/or drinking. THAT’S IT!!!
Now if you want to get a little more fancy you can throw in 8-10 peppercorns, a couple of carrots, some celery and whatever else you may want to add to spice it up a bit. If you have some extra chicken feet lying around, throw those in too! Some people like garlic cloves, maybe some lemons or oranges, skies the limit here.
IDEAS FOR BROTH: any recipes you cook with water, replace it with your broth. ie: rice, quinoa, pot of beans, soups of any kind, etc
IDEAS FOR COOKED CHICKEN FROM THE BONE: chicken salad, chicken enchiladas, chicken soup, chicken nachos, chicken tacos, etc
